Hot Hot chillies! What to do?
- This year I decided to explore the world of gardening and the result was five mini chili plants.
- But now I am left with at least 100 chillies, all in various stages of green to red and dried…

Now I like hot chillies, but these are HOT chillies… And my family is not as chilli-lovin as me!
I can’t eat them all myself, and I don’t want to throw them away.

Any suggestions or unique and creative ideas for cooking or storing?
Please help, I’ve been sneaking them into shepherd’s pie when no-one’s looking!

I think you could can them with oil somehow. If that does work, the oil would soak up some of the flavor too, and you could use that to cook or make a dressing for your own salad.

Your garden must have been so beautiful & colorful when all those chillis were maturing.

There are lots of stuff you can do with your bounty.

Freezing: Don’t rinse them just put them in heavy duty zip lock bags and throw them in the freezer as is. You may rinse them before use.

Chilli powders: Dry your chillis thouroughly then grind them to powder. You can add salt or other dried flavorings in the grinding process.

Chilli oils: Get some decorative bottles and fill part way with OVEN dried chillis (the oven is necessary to kill all bacteria that could flourish in the oil medium) then fill the bottle with a nice oil like extra virgin olive oil. Balance the amount of chillis to oil so the solution is flavorful rather than just hot.

Chilli vinegars: Same thing as the oils but with vinegars instead. This time pack the bottles with the chillis and add interesting vinegars like champagne, sherry, white wine, etc… and add garlic cloves, rosemary, cilantro, thyme; anything you can think of. Oven dry the herbs for this as well.

Dried chilli ropes & wreaths: Mix and mach all those gorgeous chillis you harvested and form them into hanging ropes or fashion them into wreaths. Add all kinds of different dried flowers, herbs, pods, leaves, etc… to the wreaths. Finish them with raffia, ribbon, twine or anything else you can think of.

You can get most of your holiday gifts taken care of by giving your oils, vinegars, powders, ropes & wreaths as gifts. I love a handmade gift more than anything.
